After three attempts, in as many years, I believe I have conquered timpano — that barrel-shaped feast of encased noodles, salami, cheese, pork, beef, ragu, hard-boiled eggs, and star of the 1996 movie “Big Night.”

I wrote about my second attempt in 2012. (The first attempt was not worthy of documentation.)

So when I read New York Times food writer, Melissa Clark’s tweaked timpano recipe from December 11 (see below), I was inspired to go for a third round over the holidays. Clark mixed and nixed, modernized and molded an easier, less labor-intensive timpano.

But I was torn. Making timpano is a feat you don’t mess with. I have learned from first-hand experience and as is evident in the movie, it is an event that is supposed to be nothing short of a mix of religious exultation and traumatic sweat — a recipe for stress and science as you chop, slice, toss, stir, wrap and bake with a bow to the ingenuity of the ingredients and salutation to the artistry of the finished product.

There’s the mess on the counter. Arithmetic is called for. You salivate as you combine a bunch of things that you may never have thought could be combined into what becomes an unwieldy mound that then has to be wrapped in dough and baked and ultimately burnt at least two times before you get it right.

But I’m a fan of Clark’s. And a failure at timpano, so …

… I tweaked Clark’s tweak. And because of the merging of her talent and deft with my reckless abandon in the kitchen (because I’ll eat anything) — I finally nailed that drum.

Clark substituted savory roasted butternut squash for the hot hard boiled eggs from the original. I followed her lead, but I wish I had used both. (The addition of roasted squash, though, was sublime.) Also, instead of wrapping it all in dough, she used fresh pasta sheets, which makes for a gigantic, layer-free lasagne, as opposed to an upside-down (not pie-shaped) over-stuffed pizza. In retrospect — give me pizza.

I used broccoli and garlic instead of her broccoli rabe (no strings attached), I substituted honey for nutmeg, and I shoved some mini meatballs in there along with three kinds of homemade (from the local pork store) sausage. (You must never, ever eliminate meatballs. Never.)

And instead of salami OR prociutto, as Clark suggested, I went with salami AND prociutto. Clark took out the pecorino romano — I kept it in.

The one mess-up is that my recent triumph at timpano will for the most part remain in limbo, mainly because I didn’t write anything down, and couldn’t read a good portion of what I did write down. Most of what I’ve written here came from memory after drinking wine and eating timpano.

I can’t calculate how long it took me, but “faster and easier” and me and timpano didn’t mix (partly because of the frantic Christmas Eve-morning search for fresh pasta sheets). But I do believe my third try gave a nod to Clark’s modernity and a bow to the integrity of the original. And props to me for messing with the pros while maintaining palatability. And I didn’t burn it.

Mid-Life: As Adaptable as a Dewar’s Bottle

We are nothing, if not adaptable, by the time we reach the middle ages. We’ve adjusted our flow meter to “just go for it!” We navigate our midlife crises with aplomb and mettle that is unique to our generation. We’ve learned to turn our heads away from ageism, and we strive to live out this chapter with vigor.

But there are some things that should not be messed with. Some things that must remain intact as foundation for our adaptability. The leave-as-is, the indefatigable. Like our lucidity; our vivacity. Our awareness of the passing of time; our confidence.

And crushed garlic. Mortar-and-pestle-crushed garlic. Garlic that is pummeled and pulverized, along with oil and other herbs until it’s pasty; its aroma sulfurous. It has a swallow so pungent, it can push your inner cheeks to your teeth.

It was the flux between adaptability and the crushed garlic called for in this Radish Salad with Anchovy Sauce from the foodie Web site Food52 that recently forced Julie and I to grab a quarter-filled bottle of Dewar’s White Label by the neck.

Just a couple of days before The New York Times ran this piece on mortars and pestles, which included the quote, “I insist on it for certain things, like garlic …” from Marc Meyer, an executive chef and restaurant owner in Manhattan, Julie and I were cooking for a party we were throwing. We were working in a kitchen that was lightly stocked. We didn’t have the basics. Or a mortar and pestle for the radish salad.

“Insist.” Like Mr. Meyer, that’s pretty much what Julie inferred when I tried to talk her into adapting the garlic – just slice it!, dice it, smoosh with a mini ricer, let’s try the immersion blender, how about a fork? (I believe I also suggested donning sneakers and stomping on it ala Lucy and the grapes.)

After all attempts failed to do what apparently only a mortar and pestle can do, we hit the bottle. Our row of alcohol on the set-up counter bar included an old bottle of Dewar’s whiskey that has been hanging around in the pantry for decades – no one ever drinks the stuff, but it is always put out at parties. It’s shaped like a big pestle.

So our pile of garlic got hammered on that bottle of whiskey.

And hence the radish salad was sublime – a riot of garlic, salt, and radish pop-and-tickle – all a result of midlife aplomb, mettle, confidence (the indefatigable), and a bottle of whiskey.

The Zaftig Female Form: It’s History

This has the potential to be a politically incorrect blog. But here goes: The New York Times reported that mannequins in Venezuela are produced according to the populace’s ideal perception of women. This means oversized bosoms, small waists and palpable hips and buttocks. In fact, in Venezuela, augmentation surgery is openly discussed and accepted, at least by the persons interviewed for the article:

Cosmetic procedures are so fashionable here that a woman with implants is often casually referred to as “an operated woman.” Women freely talk about their surgeries, and mannequin makers jokingly refer to the creations as being “operated” as well.

The article indicated some feminist outcry to the notion that perfect beauty resides in the form of an hourglass. But nothing like what would erupt in the United States should the Playboy model once again emerge as an emblem of the ideal body. I can neither pass judgment nor analyze a culture far removed from mine. But it did start me thinking about depictions of the female form.

When I wander around the Metropolitan Museum of Art, I am always entranced by the sculptures depicting women that have been excavated from the ancient burial sites of Greece, Mycenae and Cyprus. Some of these figurines date as far back as 4500 B.C. They are beautiful. Modern art thousands of years ago. I wander from gallery to gallery picking out old favorites, and discovering new ones. In the end, it is obvious – there is nothing new about hips and bosoms.

Actually, the collective unconscious that has sculpted, shall we say mannequins, goes much further back than a mere 5,513 years. Thirty-five thousand years ago, sculptures carved from mammoths’ tusks and limestone, that can only be described as zaftig were being created throughout Europe. They are known as Venus figures. So, when you think about it, the earliest artists ever, those that lived before history had a starting date, depicted their ideal women as voluptuous:

I guess the Venezuelan mannequins can be viewed as simply a bridge to prehistory.

I go through stages of reading the front section of The New York Times. I find I need to prep myself before I can delve into how the world is fracturing into a thousand little pieces. Once I’m ready, I plunge into the horror show – ready for the one-two punch of being weighed down by the oppressive facts that constitute modern day living, and frustrated by the endless non-answers. However, at least I don’t feel as if I am a complete ostrich with my head stuck in the sand. After I have been brought up to date on the latest wars, murders and irresolvable Congressional disagreements, I retreat and concentrate on the stuff that makes life worth enjoying – movies, books, art, restaurant reviews and recipes. I may have a love-hate relationship with food, but I love reading about it.

On Tuesday, January 8, 2013, I was in the mood to see what’s going on “over there.” The front page of The Times delivered, with the headline “Hints of Syrian Chemical Push Set off Global Effort to Stop It”. This was the opening paragraph:

In the last days of November, Israel’s top military commanders called the Pentagon to discuss troubling intelligence that was showing up on satellite imagery: Syrian troops appeared to be mixing chemicals at two storage sites, probably the deadly nerve gas sarin, and filling dozens of 500-pounds bombs that could be loaded on airplanes.

The article went onto discuss how the near catastrophe of easily distributed killer gas was averted. Countries that usually prefer to stab each other in the back (China, Russia, the Middle East and the United States), in a rare show of cooperation, were in synchronicity that chemical warfare is bad for all of us. Hallelujah for common sense! The article explained that there are actually several factors that need to be in place for a successful dispersion of sarin gas. Therefore, a chemical attack may not necessarily be the easiest way to obliterate the planet. And of course, the denouement of the piece consisted of the pundits warning that just because disaster was avoided this time, doesn’t mean it can’t or won’t happen. Those munitions are still out there, and ready to be used, depending on who gets their hands on them.

I was frightened. I guess that was the purpose of the story, and decided to check in with some of the guys at work to see what they thought. One friend scoffed at chemical weapons, since they can only do damage to thousands of people. On the other hand, take a nuclear weapon – now that can wipe out millions in a second. His biggest concern: Pakistan.

Another guy was much more benign. He figures if a nuclear weapon drops on his sector of the universe he won’t have time to think about it. It will be over, and that will be that. Why worry about it? I said, “But what if you survive? And it’s like the movie On the Beach?” You know that great 1959 movie with Ava Gardner, Gregory Peck, Fred Astaire and Anthony Perkins about the end of the world? Well, he figures he’d find a bridge to jump off of. Geez Louise.

We never even got into the topic of biological weapons. Anybody care to weigh in?

The N.R.A Creeps Along, and Slithers Away, from Gun Reform

In the wake of the horror of Newtown, there have been reports that the pro-gun lobby is open to reform.  A front page headline in The New York Times on Tuesday December 18, 2012 proclaimed “Pro-Gun Democrats Signaling Openness to Limits”.   What about pro-gun Republicans?   We can’t unite on the idea that the death of innocents because of way-too-loose gun laws is unacceptable?

The front page also had a story on the first of the two Newtown funerals – two little boys.  It has all been said and said and repeated, but in the solitude of my living room, the tears streamed down my face. Again.

Buried within the paper was the headline “Silent Since Shootings, N.R.A, Could Face Challenge to Political Power.”  That sounded promising, until you get behind the facts of the N.R.A.  The article summarized the status of the N.R.A., including its game-plan strategy when the country is confronted by gun killings.  Rather than promoting legislation that might actually make it impossible for these situations to occur, the N.R.A. passionately besieges Congress to defeat laws that would require background checks before a gun may be purchased, and relentlessly pushes for legislation that would permit unfettered access to buying, owning and carrying guns.  P1120516What sane person would not find this utterly abominable, especially in light of what we have experienced as a nation over the past 13 years?

Want to Make a Gun? It’s a Piece of Cake

On October 7, 2012, The New York Times ran an article discussing how 3-D printer technology is allowing us to make guns at home.  This flipped me out, because really, regardless of where one stands on the Second Amendment (the right of the people to keep and bear arms), and gun ownership laws, it does seem somewhat crazy that we are moving into an era where guns, like cakes, can be whipped up at home with a little push of the button. Talk about the Wild Wild West!

So I brought the article up with a couple of my colleagues at work – neither of whom were particularly bothered.  One guy said, “If a person is intent on killing, it is very difficult to stop them.  They will find a means to do so with whatever technology is available at the time.” And another guy said that you still need to understand how to assemble the gun, so we need not worry about our ten year olds readily printing a gun for a fun game of cops and robbers.

Well, great!

But what does it say about where we are going as a society?  The simple fact that homemade guns are coming to your local neighborhood – it just blew my mind.  I wrote the above, did a fast drawing that reflected how I saw the situation, and figured one day we’d post my thoughts on the blog.  But last Friday I was talking to a different colleague, and he said, “Do you know what one of the most watched YouTube videos is?” I wouldn’t know since I forget YouTube exists. He said there is a video online that directs you how to make a paper gun – a usable, workable device to kill someone, and it is one of the most popular, watchable, and shareable videos within the small domain of YouTube entertainment.

He shook his head in utter disgust and resignation, and then asked me if I had heard of the University of Colorado dormitory that is specially designated for college students. You know – 18-21 year olds. That own guns. (Hate to be there on a night of too much drinking.)

Wherever you look, the liberalization of gun laws, coupled with the constant progression of technology, is not making us safer. It is just making our society scarier. I grew up knowing a gun was a company-manufactured device sold through regulated retail outlets. There were laws that governed accessibility. I may not have been any “safer” than I am today, but it sure felt that way.

So how does this relate to being on the right side of 50?  Only that I have more years behind me to feel sad about the years ahead.

Steamed-Up for Thanksgiving

I am still a party girl – giver and goer. I’ve been hosting holiday dinners for decades. Whether it be a party of 50, or a gathering of five, my step-one has been to pick a magazine, a newspaper section, or even the first four pages of my ring binder with all my homemade recipes, and create my meal around that choice. Rarely do you have the same thing twice at my house. I do not stray from that credo, no matter how much skepticism, and “Oh-no-here-she-goes-agains,” are tossed my way from my guests. (Bread smeared with Nutella and stomped with hot sausage and a jelled cranberry sauce ring plopped into a tumbler of vodka top the raised-eyebrows-and-moans list.) I’m dauntless, and there is very little that I won’t try. And I will eat anything.

So two of my dependable go-tos for years, for holidays, especially, is Bon Appetit magazine and The New York Times Wednesday Dining Section. I pick a page, or a few pages that are grouped together, no matter how much they don’t “match,” or how offbeat they sound and I put my meal together from beginnings to endings. Of course there have been some disasters, but that’s all part of the fun.

For Thanksgiving this year I went with two pages of the November 12 Times’ Dining issue. I made the bulk of the recipes offered (all good), but for our blog purposes, let’s just talk turkey. I tackled chef Jacques Pépin’s Steam-Powered Turkey.
